I have been out of commission for a while and I would like to take this opportunity to thank everyone for your patience and your wonderful comments. The more I read about ancient grains and new “fad” grains that we eat for fiber the more I become confused. Personally, I have liked in the past the little cups of different kinds of rice that you pop in the microwave for one minute, but seemingly that does just not cut it any more. I have started to experiment around a little for two reasons-First, I like rice. I also like Quinoa but I don’t like Faro. I like warm rice with salmon or Chinese food, but I also love cold rice salad. So, here are a few tips for boiling or steaming grains.
Quinoa is one cup of quinoa to two cups of water. You need to simmer it for sometimes over 20 minutes, but watch it toward the end because it is done when all of the water is absorbed but burnt shortly thereafter!
Brown rice is the same-one cup rice to two cups water. simmer again until the water is absorbed.
Couscous-This is a little easier. One cup grain to two and a half cups water but Bring to a boil then just put on a lid and remove from the heat. Let is sit for a few minutes then fluff with a fork.
Just regular white rice is one cup rice to one and one half cups water. Simmer covered for about 15 minutes. BTW add whatever spice or flavoring you like to the rice and it will be absorbed.
Finally, you can do what I suggested at the beginning. Buy instant. Real grain lovers don’t do this very often, but it really does work, honest!
Lately in many magazines I have been seeing articles and statistics about plant based diets. Not vegan or even very strict vegetarian, but maybe trying a couple of days a week or say five meals per week or any goal you may chose to try. Stats about obesity, blood pressure and heart attack are astounding when your red meat and animal fat intake is reduced. Why not try it??? (Recommended-5 servings, a serving being 1/2 cup, per day of fruits and vegetables. )
These days people are ordering custom water with their meals. Feel free to do just that yourself. Lemon water is very good for you so always ask for a slice of lemon with your water. What??? You don’t order water with your meals!!! Always ask for water with a slice of lemon and not too much ice. It’s OK. Who knew?
I can’t do 8 glasses of water or liquid a day and that is not a magic number anyway, but I measure and drink 6 glasses per day.
Oh, BTW have this at home too. Recent studies tell us that dehydration can lead to a number of illness and also to premature aging! Remember too that you can count anything but a beverage containing caffine or alcohol for your liquid.
Can we agree to make 2023 a clean slate-Let’s Hope So!
I get that blog comments stay up forever and become not so timely, and I also get that Happy New Year is a bit corny, but 2022 was not a particularly great time for many people in many places and so I am putting this wish out there for all of us to give a bit of thought. What can we do to make things better? Okay, so here is my take on it.
In order to do better, you have to BE better.
Be kind to others-Golden Rule time: Do unto others as you would have them do unto you.
Communicate Better Say what you really mean.
Remember that you are nice to people not because they are nice, but because YOU are nice.
A little kindness goes a long way so try “paying it forward” a couple of times and see how it makes you feel. I bought the guy behind me at Wendy’s the other day a cup of coffee and a breakfast sandwich and he followed me out to the parking lot to thank me and said he could only afford one sandwich and was going to give it to his little boy but with the extra $$$ he bought two. Yes, if you think that made my day, you are right! Do this sometime, please. It is such a feel good sensation. So go forward with JOY into 2023 and pass it around!!!
I love to read and I mean everything from the Bible to the newspaper to cookbooks. Reading is so relaxing and calming. The next time you cannot seem to quiet yourself mentally or physically, try reading something. Perhaps a woman’s magazine or an inspirational book will help.
I like to read the Bible or any one of Max Lacado’s inspirational books. Often I will just read a cookbook or Good Housekeeping. I find this settles my mind. Try it. Sit in a comfortable place and just be quite.
PS Add a cup of peach tea with 2 teaspoons of sugar!
Yes, I know that Thanksgiving is no longer politically correct, but can we not gather with loved ones and share a meal? Can we enjoy each other’s company and forgive and forget past wrongs, think about the future not the past, and just talk about anything good that we all feel? Don’t look back, you are not going that way!
