We Are Back!!

I know it has been a while since we last posted on this BLOG and for that I am really sorry. PINK Magazine has, of course, continued to publish and my articles have appeared monthly, but the BLOG has been sadly neglected. We are back in all categories, and we hope that you will try us out, or return if you were a regular. Again please accept apologies and Welcome Back!

Yummy Four Ingredient Desserts

Here are some more recipes from the Four Ingredient Cookbook that are fast and easy. Boy, time savers that are also tasty and do not look nearly as easy as they must be some kind of a gift, right?

Pineapple Coconut Sherbet

  1. 2 cans (8 oz.) of unsweetened crushed pineapple drained (I save the juice for smoothies)
  2. 2 cups non-fat vanilla yogurt (Obviously you can use any other yogurt but I use the Okinos 80 calorie pineapple yogurt ,duh!)
  3. 1/2 cup shredded coconut-I use the sweetened
  4. 2 Tablespoons honey
  5. Combine all ingredients and stir well. Pour into a shallow pan and freeze until soft set. Pour into a bowl and beat for appx. 4 minutes. Pour into a container with a cover and freeze solid. Soften at room temp. for about 15 minutes before serving. This is really tasty and simple. Top with a bit of Cool Whip for a fancy touch.

Chocolate Express

Boy, is this ever GOOD!

  1. 6 Tablespoons chocolate liqueur (Or something else you like-brandy, bourbon, etc.)
  2. 1 envelope plain unflavored gelatin
  3. 1 1/2 cups black coffee
  4. 2 cups fat free chocolate ice cream

Combine liqueur and gelatin in a blender container. Wait for 1 minute for gelatin to dissolve a bit then add hot coffee. Blend until gelatin granules are all dissolved. Add ice cream and blend until smooth and pour into four servers, custard cups, etc, and chill until set.

Obviously you can really make this with any ingredients to your own taste. Do watch proportions though.

Cutting Edge

We Pescatarians are growing in number. It is a true cutting edge healthy eating breakthrough. To eschew red meat and the flesh of other mammals is a good thing and at some level we all know this. Sustainable fish and shell fish and vegetables and fruits are so good for our bodies.

Fad diets and off the wall eating plans will never survive and we all know it. How many times have you tried it yourself or seen someone else fail or the whole silly idea go away-Spinach and grapefruit, raw vegan, Keto, liquid only, etc. all may last a while, but good health and sustainability are the only true lasting tests of good nutrition.

Do it for yourself, the planet, and the assurance of a longer more physically fit life.

Do Your Best!

We all try to do our best every day, I think. Some days are better than others, obviously, but that is never an excuse to give up or be discouraged. Okay, I grant you that it may seem like it often, but don’t do it. One of my favorite quotes keeps me optimistic:

“Everything will be all right in the end, and if it is not all right, perhaps it is not the end yet!”

Coffee, Anyone?

Coffee is so confusing these days one does not know what to order. Even more important, it is often debatable what coffee is value for money, overpriced, over processed, non-sustainable, and on and on. Here is a simple guide to what you are getting for your $$$ and options for you to make your own informed selection.

 

  1. Drip: Used in most coffee machines. Use about 2 tablespoons for 10 ounces of water. Many different brands to select from and personal preference is the guideline.
  2. Cold brew: This is new and a matter of personal taste. You soak ground coffee for up to 24 hours in cold water. Use about 10-12 ounces of beans to 6 cups of water. This is very mild and I think it tastes watery!
  3. Single Origin:Many people swear by this as it is traceable sometimes even to a single farm but mostly to a country so one can balance the “fair trade”option
  4. Instant:This speaks for itself and has had a bad reputation, but there are brands of instant coffee that I think are very good and there has been huge improvement in instants. I like the dark black Folger’s.
  5. French Press: In a cylinder, pour water over coffee (your grind preference) and let it set again to your strength preference. Pour out gradually after you depress the handle.

there are other exotic ways to buy/make/enjoy coffee, but if you notice, I have used the word preference many times in this article. Coffee is purely a matter of personal taste. ENJOY!

Movie Review

We saw “Ford versus Ferrari” last night and it was really excellent. Matt Damon absolutely nailed Carrol Shelby. He had the accent, the swagger, AND the just right cowboy hat.

The race scenes were amazing if just a bit long. Ken Miles was depicted as exactly the super hero knowledgeable guy that he honestly was. Very humble but also the acknowledged expert. I also found it fascinating to see Henry Ford II depicted as being surrounded by “suits” who were nothing more than yes men.

Go see this movie even if you are not a car buff. Highly recommended.

Yum Yum-FishTaco!

We ate lunch out the other day and I had what was called the Baja Fish Taco at Casa Del Sol. Wow-it was fabulous. As far as I could tell and from what the menu described, it was deep fried, but very lite, panko  mahi, sweet pineapple/cabbage cole slaw, bits of  red onion, and a lovely thousand island dressing. This was the perfect lunch dish and soooo easy. I am going to do it again and again and serve it next time I have people over for sure.

Pescatarian News Alert

I love news alerts. Generally Speaking they are updates on current thinking in a variety of topics. As you would expect, the term “Pescatarian” is so new in common usage that my spell check is not even consistent on the actual spelling. Is yours??

As we know, people who wear this label eat no red meat, chicken, turkey or any other meat products or by-products but have added or re-introduced, as in my case, fish and shell fish. We are very careful about health as always and look for “wild caught” and sustainable and other vocabulary in labeling. If you are a vegetarian for health reasons only, I suggest you look in to this new format. It broadens so many possibilities.

School Time!

Yes, I love that old Chuck Berry song. Kids are off to school now and catching the bus right down on the corner in front of my house. So, this comment is two pronged.

Number one-Watch out for children because chances are they are not watching out for you.

Number Two-Help a teacher. Many teachers, no all teachers except college professors, are woefully underpaid for the responsibilities they have. Find out about a teacher in your local school or find out about some needs for supplies, food donations, clothing help etc. and extend a hand to these real heroes.

Our church asked our teachers to list their needs and they we put out a box in front of the Sunday School classrooms. It was full in a week. There is a teacher in my neighborhood who shared with me that her greatest need is not for tissues or pencils, but for earbuds! Yes. they are frequently lost, broken, etc. and are costly to replace. Another teacher at my local school told a woman’s group that I belong to that her greatest need (Believe this or not!) was for children’s clothing. Second grade kids who wear the same shirt every day, have no coat, have holes in their shoes, and do not wear socks have little need for expensive pens.

Food-Well, yes. Juice boxes, health bars, trail mix and so on are all good to give to a classroom teacher, but you could also find out about the Backpack Buddies in your area. These are groups who pack a special “weekend addition” to those children who get school lunches, but do not have a food source over the weekends. Such things as cereal, staples, canned goods, and donated seasonal items are always needed.

 

Do a little “homework” and fill a need. I get that it does not help a teacher with salary negotiations with the local School Board, but you can help a teacher help a child. Try it-I  promise that for a very small investment you will feel VERY good.
